- to tastesalt
- 1/4 cupfresh cilantro, chopped
Instructions
- 01
Step 1: In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the diced onion and bell pepper until they are soft and translucent, about 5-7 minutes. This adds a depth of flavor and ensures your vegetables are tender.
- 02
Step 2: Stir in the black beans, ground cumin, and salt, cooking for another 2-3 minutes until heated through. The cumin will add warmth and complexity to the filling.
- 03
Step 3: Remove the filling from the skillet and wipe it clean. In the same skillet, add another tablespoon of olive oil and heat over medium-low. Place one tortilla in the skillet, sprinkle half of it with a generous layer of cheese and the vegetable-bean mixture, then fold it over.
- 04
Step 4: Cook for 3-4 minutes per side, pressing gently with a spatula until the tortilla is golden and crispy and the cheese is melted. This step is key for achieving that perfect crispy exterior and gooey interior.
- 05
Step 5: Repeat with the remaining tortillas and filling. Keep the cooked quesadillas warm in the oven set to low (about 200°F or 90°C) while you finish the batch.
- 06
Step 6: Cut the quesadillas into wedges, garnish with chopped cilantro, and serve warm.
Chef's notes
- Be careful not to overfill the quesadillas to avoid spills when cooking.
- For a healthier option, consider using whole wheat or gluten-free tortillas; however, the texture may vary.
- You can easily make these ahead of time and reheat them in the oven, but for the best texture, cook them fresh.
