Ingredients

  • 8 ouncesrice noodles
  • 14 ouncesfirm tofu
  • 1 largecarrot
  • 1 mediumbell pepper
  • 1 cupbean sprouts
  • 3 stalksgreen onions
  • 2 tablespoonspeanut butter
  • 3 tablespoonssoy sauce
  • 2 tablespoonslime juice
  • 1/4 cuppeanuts
  • 2 tablespoonsvegetable oil

Instructions

    Soak the rice noodles in warm water for about 20 minutes until softened; drain and set aside.

    Cut tofu into cubes and sauté it in vegetable oil over medium heat until golden brown, then remove from the skillet.
