- 2 largeeggplants
- 1 cupflour
- 2 largeeggs
- 2 cupsbreadcrumbs
- 3 cupsmarinara sauce
- 2 cupsmozzarella cheese
- 1/2 cupParmesan cheese
- 1/2 cupolive oil
- to taste nonesalt

Instructions

Slice eggplants and sprinkle with salt. Let sit for 30 minutes to draw out moisture. Rinse and pat dry.

Dredge eggplant slices in flour, dip in beaten eggs, and coat with breadcrumbs.
